Corsica

It’s high, hot, rugged and gorgeous. Cap Corse in the north, the Straits of Bonifacio in the south and the bays and anchorages of the west coast in between.  Sorry to say that while there are plenty of good recipes in this section none can claim to be Corsican.

Crevettes in Crème Fraîche Sauce.  A tasty meal for seven cooked under spinnaker on the crossing to Corsica.

Duck a l’Orange.  I’m not certain that Saskia knows her hawk from her hanser but the duck went well with an evening in Scandola.

Chicken with Fennel. There have been several lows in my life and this was one but the meal made up for it.

Gnocci  Anse de Focolara. Serendipity bought us here.  The meal and the setting were perfect.

Opa’s Macaronie A simple dish cooked by Saskia to her grandfather’s recipe.     

Salad by Candle Light.  Beer and ice creams ashore combined with Colin’s meticulous but slow cooking made for an enchanting evening.

Simple Italian Pasta. This was just what was needed before a night sail.

Spicy Fish Stew.  Believe me when I tell you that the mountain roads of Corsica focus the driver’s mind.

Tuna Bake.  Figari was any port in a storm but turned out to offer much more than a safe anchorage.

Only the first four recipes have been transferred from Compromis Cookbook to the website but the rest will follow.
